Extraordinary Ukrainian red dry appassimento style wine, Kara Kermen from Southern part of Ukraine. The wine is hot like the southern night, thick and enshrouding. Figs in chocolate, cherries with rum, truffles, noble anise and a little smoke — numerous flavours can be found in this glass. This assemblage of Saperavi and Tempranillo is made by the method of “appassimento” from dried berries — hence the pleasant tartness, sweetness and rich colour. The wine got its name after a centuries old fortress Kara Kermen (which means Black Fortress), which stood on the territory of the modern city of Ochakiv, near the Beykush winery. Fermentation took place in open vertical oak barrels. Wine has aged more than 24 months in American oak barrels.
It is a truly rare wine is Ukraine’s answer to Amarone. We will not reveal all the secrets of “Kara Kermen” — they are revealed to everyone in their own way
Food Pairing: Kara Kermen pairs well with venison, beef short ribs, braised beef, grilled meat, rich stews and beef stroganoff as well as with aged cheeses, and poultry
