Aligote 2021 from Biologist Winery. The term "Bio," derived from Latin, translates to "life." Biologist, aptly named the "life guide," stands as an organic and biodynamic winery nestled in the village of Lisnyky near Kyiv.
Pioneering in Ukraine, Biologist proudly embraces the biodynamic method in both viticulture and winemaking. The Aligote undergoes a meticulous process, featuring 36 hours of cold maceration and fermentation. Subsequently, it matures in oak barrels for a span of 12 months, undergoing batonnage every 4 months. Sulfuring is carefully managed, limited to 50 ml. This exceptional wine is bottled without filtration, ensuring the preservation of its natural essence.
