Introducing Biologist Wine Company
“Bio” means “life” (lat.) Biologist is the “life guide”, an organic and biodynamic winery located in the village of Lisnyky near Kyiv.
The winery was set in 2019. It’s quite young but with 15 years of experience in the wine sphere.
Biologist is the first Ukrainian winery to announce the use of the biodynamic method in viticulture and winemaking. This is the first year it has released biodynamic wines under the symbolic name of Pershotvir, which, translated from Ukrainian, means “the first creation“.
Just around 3000 bottles are produced.
They have 3 vineyards: one of them is in the Odesa region, and two others are in the Kyiv region, in the villages of Lisnyky and Bezradychy. They grow Pinot Noir, Cabernet Sauvignon, Saperavi, Grüner Veltliner, Müller-Thurgau, Weissburgunder, Gewürztraminer, Riesling and Chardonnay, Aligote, and the indigenous grape variety, Telti-Kuruk, which, until now, has been grown only in the south of Ukraine, in Odesa and Mykolaiv regions.
The current production is from the grapes from Odesa terroir. In August, they receive grapes from the Odesa region, press them and send them to vinifiers.
To increase the immunity of the vine and soil, the winemaker Igor Petrenko abandoned artificial chemicals like herbicides and pesticides and began to use plant and mineral products.
Low intervention (using herbal and mineral products) with natural fermentation processes and strict temperature control. They use only mature grapes and undamaged berries. The gravitational principle of a technological process without artificial chemicals allowed the winemaker to make wine as art.
Reduce the grapes' volume in half and collect berries in the first instance according to pH indicators. They use sulfur and other preparations to fight grape juice and wine oxidation. New oak barrels by themselves help handle wine antiseptically. Most wines carry out a long maceration (6–10 days) while adding dried crests. The spontaneous fermentation occurs in such wines as Pinot Noir, Merlot, Odessa Black, Rkatsiteli, Chardonnay, Aligote.
